Ingredients

  • ½ teaspoon paprika
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon cayenne pepper
  • salt to taste
  • 1 tablespoon olive oil
  • 2 ripe (yellow) plantains, peeled and cut into 1/8-inch slices
  • 3 tablespoons white wine

Cooking Directions

  1. Mix paprika, thyme, oregano, garlic powder, black pepper, cayenne pepper, and salt in a bowl. Add plantain slices to spice mixture and turn to coat.
  2. Heat olive oil in a skillet over medium-high heat. Cook plantains in skillet until softened, 1 to 2 minutes per side. Pour wine into the skillet. Bring wine to a boil and simmer until wine cooks off, about 5 minutes.
