Delicious pesto sauce that can be made nut-free or dairy-free (if you omit the Parmesan cheese). Add more or less of your favorites to reach your desired consistency or taste. Use on pasta, pizza, as a dip, etc.

Ingredients

  • 6 garlic scapes, chopped
  • 1 cup fresh basil leaves, or more to taste
  • ⅓ cup fresh parsley leaves
  • ⅓ cup grated Parmesan cheese
  • 1 scallion bulb, trimmed, or more to taste
  • salt and ground black pepper to taste
  • ½ cup olive oil

Cooking Directions

  1. Combine garlic scapes, basil, parsley, Parmesan cheese, scallion bulb, salt, and black pepper in a food processor; pulse to chop. Pour olive oil in slowly, with the processor running, until pesto sauce is smooth.
Substitute 2 garlic cloves for the garlic scapes if desired; Add pine nuts if you like.
