barbara Recipe ❘ Quick and Easy Salad Dressing

This is my favorite dressing of all time and I usually make a largish batch and store in the fridge - it is sweet and sharp and tastes especially great with bitter greens. The trick is to finely grate the garlic (I use a Microplane®) plus the secret ingredient, maple syrup. I like my dressings sweet, but just use less maple syrup if you like your dressings more tart.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons maple syrup
  • ½ teaspoon Dijon mustard
  • 1 clove garlic, finely grated
  • sea salt
  • 1 pinch ground black pepper

Cooking Directions

  1. Stir together olive oil, balsamic vinegar, and maple syrup in a small bowl or cup until well blended. Mix in mustard and grated garlic. Season with salt and pepper.
